Fall Salad with Warm Apple Cider Vinaigrette
Roasted Butternut Squash
Toasted Pumpkin Seeds
Dried Cranberries
Sliced Apples
Quinoa
Lettuce Mix
Warm Cider Vinagrette
Warm Apple Cider Vinaigrette
1 cup olive oil
1 TBL minced red onion
¼ cup apple cider vinegar
¼ cup maple syrup
1/3 cup apple butter
1 TBL whole grain mustard
1 TBL fresh thyme leaves
1 tspn orange zest
Method
Heat oil in a pan on medium heat and melt onions until translucent.
Remove from heat and whisk in remaining ingredients
