A man born on the streets of Cambodia – living in an orphanage until the age of four. That’s when a family from Dover adopted Timothy Parsons and he experienced true love and selflessness in action. Fast forward to today, Timothy is using his story to help others get back on their feet…one bed at a time. You already know that many holiday traditions are getting canceled due to COVID-19 concerns. However, what’s not getting canceled – is the need for help. The need for food assistance is expected to be even greater this year. We talk with Chip Guy, Communications Director with the Sussex County Government, about some of the “Caroling On The Circle” changes.

Prior to COVID-19, we always loved welcoming the sweet faces from Barn Hill Preserve in Delaware to Historic Studio D. While that’s not happening right now, we can still check in with our friends, virtually. We check in with Josh Mueller, Owner of Barn Hill Preserve Delaware and Noah, the two-toed sloth, as they tell us all about Barn Hill’s mission.
A lot of us have started in on some of those holiday flavors – pumpkin pie, cinnamon, peppermint.. but here’s the thing, do you have the time to spend hours in the kitchen putting those said flavors together? Didn’t think so. In today’s Monday Memory, we flash back to when Jimmy and Lisa got together to make “Pumpkin Pie Cinnamon Rolls.”
Homemade Hash is quick and hearty, perfect for breakfast, lunch or dinner! Check out the recipe below:
What You’ll Need
- 1/2 cup (1 stick) butter
- 2 onions, diced
- 3 cups diced boiled potatoes (3 to 4 large potatoes) (see Notes)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups diced cooked corned beef (about 1 pound)
What to Do
- In a large skillet over medium-high heat, melt butter; saute onions 3 to 4 minutes, or until tender.
- Add potatoes, salt, and pepper and cook 10 to 12 minutes, stirring occasionally. Add corned beef, and cook 5 to 6 minutes, or until heated through.
Notes
- You can substitute refrigerated or frozen diced potatoes, if you’d like.
- Top with a fried egg for a tasty breakfast dish!
