Chef Arif Kutlusoy from Delmar Diner is in the DelmarvaLife kitchen making a seafood feast that includes scallops and fish. The recipes are below. Enjoy!
Sole Francaise Pan Fried
2 Eggs Beaten
1 Tablespoon Olive Oil
1 Tablespoon Butter
½ Cup Flour
¼ Teaspoon Salt
¼ Teaspoon Onion Powder
¼ Teaspoon Garlic Powder
¼ Teaspoon Black Pepper
2 Large Sole Filets
In a large skillet, heat the oil and tablespoon of butter over medium heat.
Mix the flour and seasonings. Put the sole filet in the seasoning mix, then
dip in the beaten eggs. Please in a skillet. The egg should sizzle. Fry over
medium heat until golden brown on both sides, 3 to 4 minutes
Remove from skillet. Keep warm
Discard oil from skillet
Add White Wine
Add the juice of ½ a fresh lemon
Add one tablespoon of seasoned flour, bring to a boil. Cook for 5 Minutes
Sauce should be creamy
Creamy Risotto With Sauteed Scallops
1 Cup Arborio Rice
2 Tablespoons Olive Oil
½ Cup Chopped Onion
2 Tablespoons Chopped Garlic
2 Ounces of Butter
3 Cups Chicken Broth
1 Cup Heavy Cream
2 Teaspoons Italian Herbs (Parsley, Basil, Oregano)
½ Cup Parmesan Cheese
Heat butter and oil in a saucepan over medium heat. Add onion and garlic.
Cook until soft. Add rice and stir for one minute. Add broth and heavy
cream, stirring constantly until liquid is completely absorbed. Cook for 20
minutes. Remove from heat, stir in the grated parmesan cheese.
Heat Sauté pan, add oil, sauté garlic and scallops. Cook over medium heat 5
to 10 minutes. Turn midway. Add seasoning.
