Goat Cheese & Pistachio Truffles

- 8 oz Fresh Goat Cheese
- 1/4 Cup Chopped Sun Dried Tomatoes
- 1/4 t. Dried Oregano
- 1/2 Cup Finely Chopped Pistachios
Mix all but pistachios in a bowl. Make goat cheese balls and roll in pistachios. Chill in airtight container for 20 minutes before serving.

- 1 Cup Mayo
- 1/2 T. Whole Grain Mustard

- 6 Slices Crispy Cooked Bacon
Split eggs, reserve yolks in a bowl. Mix yolks with mayo, mustard, truffle oil, salt and pepper. Fill egg whites. Crumble bacon and sprinkle paprika over top.

- 1 Sleeve Do-Si-Do Cookies
- 4 oz Cream Cheese
- 8 oz White Dipping Chocolate
Finely crush cookies. Blend with cream cheese. Roll into balls. Melt chocolate and dips balls to coat. Set on waxed paper until cooled.
