Summer Superfood Salads with Dr. Catherine Smoot-Haselnus
Fresh, light, and healthy.
Today we welcomed Dr. Catherine Smoot-Haselnus into the DelmarvaLife kitchen to show us some summertime meals that will do our bodies good.
Salmon Salad
Combine following ingredients:
- 1 1/2-2 lbs salmon – grilled, chilled and flaked into large pieces
- 1 c. small diced celery
- 1/2 c. finely chopped red onion
- 2 T. parsley & Shishu leaves – finely chopped
- 2 T. small capers
- 2 T. lemon juice & zest
- 2 T. olive oil
- pinch of salt
- 1/2 tsp. black pepper
Chicken Salad
Combine following ingredients:
- 4 poached chicken breasts shredded into bite sized pieces (boneless, skinless)
- 1 C. diced celery
- 1 1/2 C. seedless grapes cut in half
- pecan halves & almonds
- mayo
- blue cheese
Dressing
Combine following ingredients:
- 1/4 C. lemon juice & zest
- 1/2 C. plive oil
- 1 T. dijon mustard
- 1 tsp. honey
- 2-3 cloves garlic, minced
- 6-10 fresh basil leaves
- 1/2 tsp. dried oregano
- Pinch of salt & pepper, to taste
