Honey Cakes:
Cake Ingredients:
· 1 egg
· ¾ cup granulated sugar
· 1 tablespoon unsalted butter, melted
· 1 cup sour cream
· 1 teaspoon vanilla extract
· 1 1/3 cups all-purpose flour
· 2 teaspoons baking powder
· ¼ teaspoon baking soda
· ½ teaspoon salt
Honey topping Ingredients:
· ½ cup honey
· 2 tablespoons light brown sugar
· ½ teaspoon cinnamon
· 2 tablespoons unsalted butter, melted
Directions:
1. Preheat oven to 350*F, put cupcake cups in a cupcake pan.
2. In a large bowl beat egg until frothy. Beat. In sugar and butter until smooth. Add sour cream and vanilla and blend well.
3. Stir in dry ingredients slowly and blend well.
4. Pour batter evenly into the cupcake pan.
5. Bake for 15 minutes.
6. Mix all ingredients for honey topping in a small bowl.
7. After removing the cupcake pan from the oven spread honey topping over cakes and return them to the oven for 15-20 minutes.
