Game-day Bacon Cheeseburger Bites
(Low Carb/ Gluten Free)
- ¼ Cup of Heavy Whipping Cream
- ½ Cup of mayonnaise
- 2 tbsp. of flax seed meal
- 3 Eggs
- ¼ tsp. of pepper
- ½ tsp. of garlic
- ½ tsp. of onion powder
- ¼ tsp. of celery powder
- ½ tsp. of low sodium Worchester sauce
- ¼ tsp. of kosher salt
- ½ tsp. of mustard
- ½ cup of shredded cheddar cheese
- ¼ of an onion diced small
- 1 ½ lbs. of ground beef
For Garnish:
- Shredded lettuce
- Relish or small diced pickle
- One small diced tomato
- Ketchup
- Mustard
Method:
Preheat Oven to 400 degrees
Whisk together the cream, mayonnaise, eggs, pepper, garlic, onion powder, celery powder, Worchester sauce, salt, mustard, and cheddar cheese in a bowl. Set aside.
Next cook ground beef and onions together. When completely cooked strain the oil from the ground beef mixture. Allow to cool for a few minutes then add to the cream mixture. Fully Combine.
Spray nonstick cooking spray in a mini 24 cupcake pan. Fill each using a small spoon. Fill almost to the very top.
Bake on 400 for 8-10 minutes. Bottoms will be dark brown and center will be slightly firm. Allow to cool slightly before using a small knife to release them from the pan.
Sprinkle a serving tray or plate with shredded lettuce. Place bites on top and garnish with tomatoes, pickles, bacon bits, ketchup and mustard.
Makes Approximately 24 Mini Bites
Sweet Potato Nachos
Low Carb/ Gluten Free
- 2 sweet potatoes
- 1 tsp cumin
- Salt
- 1 ½ pound of ground beef
Toppings:
- Cheddar cheese
- Shredded Lettuce
- Salsa
- Avocado
- Cilantro
- Sour Cream
Method:
Preheat Oven to 400 degrees
Cut 2 sweet potatoes into ¼ inch rounds. Place on baking sheet lined with parchment paper. Spray sweet potatoes lightly with cooking spray. Add cumin and desired amount of salt. Cook for approx. 15-20 minutes until sweet potatoes are tender and slightly crisp around the edges.
Remove from oven and layer sweet potatoes with ground beef and cheese. Place the pan back in the oven and allow the cheese to melt.
Transfer the nachos to desired serving plate. Add topping as much or as less as you would like. Enjoy
