1/2 C. Green Pepper
1/2 C. Yellow Pepper
1/2 C. Red Pepper
1 C. Onion
1/4 t. Thyme
1/4 t. Fresh Garlic
1/4 t. Scotch Bonnet Pepper (Chef Elvis says to use gloves when chopping!)
2 T. Curry Powder
1 Pinch Whole Spice
1/2 C. Water
1 T. Olive Oil
Place olive oil in pan and turn stove on low. Once the oil is hot, add fresh garlic and whole spice. Then, add all your fresh vegetables and seasoning. Sauté this mixture for about five minutes. Add water as needed to keep vegetables from sticking to the pot. Then, add shrimp and cook for another three minutes. Serve over white rice, peas and sweet plantains.
