Every year the Ocean city Sons and Daughters of Italy put on an amazing Italian Festival.
For the past two years, they’ve come to the show to promote it. We always have fun when member Barbara Graziosi is here, but we couldn’t wait until next spring for her to come back. We get her in the DelmarvaLife kitchen early to show us how to make a quick version of Gnocchi.
Here is the recipe:
Easy Gnocchi
2 1/2 cups instant mashed potatoes
1 teaspoon salt
2 1:2 cups hot water
Mix in bowl and cool COMPLETELY. Add 2 eggs and 4 cups of flour. Adjust to touch. Cut off a small section at a time and roll until it looks like a rope. Cut in small pieces. Use extra flour as needed. With two fingers, curl each piece making an indent. Bring water with a little salt to a bowl. Drop gnocchi in gently and stir gently. When gnocchis float to the top, drain and add whatever sauce you want to them. Sprinkle some Parmesan or Romano and enjoy!!!
