Baked Oysters – Executive Chef Jason Dietterick – Blue Coast Seafood Grill
8 oz of Spinach
1 Cup Cooked Bacon
1/4 Cup Roasted Garlic
Salt & Pepper to Taste
Sherry Vinegar to Taste
Cook bacon. Once bacon is crispy, remove bacon and leave fat in the pan. Add your spinach and roasted garlic. The spinach will begin to wilt. Add bacon, salt, pepper and vinegar to taste. Take the mixture out of the pot and let it cool in the refrigerator.
Pre-heat oven to 425 degrees.
Once the mixture is chilled, stuff the mixture into the opened oysters. Cut brie cheese about 1/8 of an inch thick and place on top of each stuffed oyster. Once stuffed and topped with cheese, put into pre-heated oven for about 10-15 minutes, or until the cheese is melted and a light golden brown. Enjoy!
