Roasted Pumpkin Seeds
Rinse & soak seeds in cool water overnight. Drain, rinse and pat dry.
Preheat oven to 300*
Melt butter & coat seeds in melted butter (just enough to coat)
Sprinkle with salt & seasonings of choice (showing garlic and Chai Spice)
Bake for 45 mins, stir/rotate every 15 mins or so for even crisping.
Pumpkin Pie Chia Pudding
1 c any type of milk
1/2 c pumpkin purée (fresh shown, canned ok too, just pure pumpkin NOT pie filling)
3 dates w/puts removed
1t vanilla
2t Pumpkin Pie Spice mix
Pinch of salt
1/4 c chia seeds
Blend everything except seeds well. Add chia last.
Refrigerate 2-8 hrs. Top with yogurt or cream, maple syrup or cinnamon as desired.
