Hot Potato Salad with DelmarvaLife Viewer, Gale Smith
We recently put a call out on Facebook asking viewers to share some family recipes.
Gale Smith of Millsboro, Del. answered that call and she joins us in the Kirby and Holloway Kitchen making potato salad with a hot vinegar base.
Hot Potato Salad
- 8 boiling potatoes, 2.5 pounds
- 5 slices bacon
- 1 tbsp flour
- 1/2 cup water
- 1/2 cup vinegar
- 2 tsp salt
- 3/4 tsp sugar
- 1 onion, sliced thinly
- 2 tsp parsley
- pepper to taste
- Boil potatoes until tender
- Slice bacon into small pieces & fry until crisp and remove from pan to fat in pan, add flour & blend, then slowly add vinegar and water
- Cook until it thickens
- Add salt, sugar and onion
- Peel & slice potatoes
- Add bacon to them and pour hot dressing over them
